Before leaving the kitchen when the work is done:

• Unplug equipment.
• Check pilot lights, deep-fat pan fryers.
• Check for and clean up accumulated grease.
• Remove combustibles from near hot surfaces.
• No cigarette smoking in hazardous areas.
